Saint-Géron
The mineral springs of Saint. Geron in the Auvergne region of France has a long history going back to the Gallo-Roman time.

The water emerges at the spring after a 1000 year journey through the rock formation as a natural sparkling. To collect the water from a rock fault a 240ft long ditch has been created in the 19th century.

At the end of the 19th century during work on the water collection reservoir antique wells and coins and offerings from the Gallo-Roman period were discovered at the source. One of the coins had a portrait of Empress Faustina Augusta (IIc AD) on the front and an image of Ceres, goddess of fertility on the back and the images were used in early labels of the water. It also dubbed the water the “Queen of Table Waters”.

Today a a new drilling project created sufficient volume for a new well and in 2006 the ancient location houses a ultra modern bottling plant. The water has long been recommended as an aid in the treatment of anemia, digestive problems, diabetes and even gout. Its elegant glass bottle was created by painter and designer Alberto Bali.

Matching Bottled Water With Food
The FineWaters Balance categorizes the "mouthfeel" of water based on the level of carbonization in five steps from Still to Effervescent, Light, Classic and Bold. This categorization is the basis of matching water with food in a fine dinig experience.
The Flavor of Bottled Water
When tasting water the most important factor in its overall integrated sensation we call flavor is the mouthfeel generated by the size, amount and distribution of the bubbles or the absence of it.
