FineWaters at THE NIBBLE

In New York City—arguably the food capital of America, with hundreds of specialty food stores, more than 30 food-specific newsstand magazines, the eagerly sought Wednesday “Marketplace” food section of The New York Times, and the entire Internet at the disposal—there is no source of information about specialty foods. It is hunt and peck: choose something from the shelf and hope it was good.

Karen Hochman, a New York foodie, began to e-mail her favorite product “finds” to her foodie friends several years ago. Those e-mails grew into THE NIBBLE™ e-zine; and many nibbles later, the e-zine became THE NIBBLE online magazine recently launched.

FineWaters is thrilled to be contributing to THE NIBBLE and having our own Michael Mascha, chosen as the Contributing Editor, Bottled Water. At THE NIBBLE, Michael will be responsible for product reviews and integrating bottled water into an epicurean context as well as reporting about the evolving bottled water etiquette.

Matching Bottled Water With Food
The FineWaters Balance categorizes the "mouthfeel" of water based on the level of carbonization in five steps from Still to Effervescent, Light, Classic and Bold. This categorization is the basis of matching water with food in a fine dinig experience.
The Water Glass
When one orders water in a fine dining restaurant it becomes rapidly clear that water is, in most cases, an afterthought. We have been served water in all possible contraptions from heavy whiskey tumblers to long highball glasses and the dreaded lemonade glass. A wide variety of wine glasses are also often used as water glasses. This is not appropriate.
The Flavor of Bottled Water
When tasting water the most important factor in its overall integrated sensation we call flavor is the mouthfeel generated by the size, amount and distribution of the bubbles or the absence of it.
